Tortilla soup
2014-04-13Soup base:
3 c. boiling water or broth
1 roma tomato
1 carrot
1 stalk celery
1 thin slice of onion
1 garlic clove, peeled
1 thin slice of yellow squash
1 thin slice of bell pepper
1 thin slice of cabbage
1 mushroom
1 Knorr chicken / veg bouillon cube
1 Tsp taco seasoning
Add to soup later: optional
1/2 c. cooked chicken
1 T. pickled jalapeno
1/4 c. pitted sliced olives
1/4 c. canned corn
1 c. (2 oz.) tortilla chips
Directions
Place all ingredients except chicken, jalapenos, olives, corn and chips in Vita-Mix in order listed. Secure lid and select Variable speed #1. Turn on machine and quickly increase to #10, then to High. Run for 3-4 minutes until steam escapes through lid opening. Reduce speed to Variable #2. Remove lid and drop in chicken, jalapenos, olives, corn, and chips. Run for an additional 10 seconds. Serve immediately. Makes 5 one cup servings.
If you don’t have Vita-mix, sauté all the above in a pan until cooked and blend it until smooth.
Serve with a dollop of sour cream.
