Chicken Dry Fry
2012-06-29Ingredients
Chicken 2 pounds preferably thigh meat or dark meat. Chicken breast would become very dry.
Chilli powder 1 tbs
Turmeric powder 1 tps
Gharam masala 1 tbs { check my notes for Gharam Masala recipe }
Salt to taste
Oil 1 tbs
Curry leaves to Garnish
Method
Marinate the chicken cubes with chilli powder, salt, turmeric and gharam masala. Let it sit for 30 mins.
In a Kadai or frying pan, add oil and let it become really hot…. only if the oil is really hot the meat will get a nice sear on the outside.
Now add the marinated meat….it will sizzle and will look very dry. Just toss the meat in the oil and put a lid on it.
After 10 mins the chicken will let out all the water content from it and will look like a watery sauce.
Let it cook for another 5 mins and now open it and cook it on high flame untill the gravy becomes really dark.
Turn it off and sprinkle some pepper powder [ optional ] and garnish with curry leaves.
Once you are done with the chciken, if you add some white rice to the pan and mix it with the left over gravy sticking to the bottom of the kadai and eat it…..it will taste heavenly 🙂
